I have noticed in G. Bernard Shaw’s Pygmalion, Eliza start speaking in an old style whenever she feels emotional, does this say anything about her language or training?

Yes, actually it is the language that dominates in Pygmalion in different forms, everything using slang style like warm pleading and small talk to big talk about poverty and soul. Depending upon the situation and whom we speak to, the communication and language can connect or separate people, elevate or degrade them, transform or avoid transformation. Also, we find out that language need not to be effective or true, it could deceive as easily as could tell the truth. Hence, ultimately it is the language that binds this play and expects carefully reading, even a single word in it could define or describe a person.
